Thats a tough one. I would have to say DOOM/DOOM II. Sure Wolfenstein was the first good, True FPS game, but DOOM made the genre so much better and set the bar so high. Most FPS games that came out after DOOM were pretty much copy-cats. It was also the first online game I ever played. It was the coolest thing in the world to be able to play deathmatch with a buddy over dial up (56k modem). DOOM was the king for many years, until Quake came out. My runner up would probably be Half-life.

Call of Duty 4: Modern Warfare. Sure Halo sells alot, but it's mostly for kids, very cartooney. Gears is very addicting online. But COD4 is all around great, online and campaign.

With so many out there.. Hmm, I loved Action Quake 2 for a long time.. can't say greatest though. Quake 3 is always really easy to hop in and out of..

Bioshock was great the first time through, but hard to get into after that..

Killzone 2, for as short as it was, was a blast to play. ya know.. I can't choose just one. I'm gonna say all the ones I've mentioned are shining examples of the genre.
