Grim Fandango. Hopefully that will change in October when Brutal Legend comes out.

Grim Fandango is the best game he's done (in my mind). It is also one of my favorite games of all time.
Grim Fandango was such an amazing adventure game! It had a noir flair and comedy. The art style was impeccable. The storyline was all-around fantastic. This game is just something many more gamers should have the experience of playing.
Unfortunately it's not on the radar anymore very much so the current, new gamers have mostly missed out on this gen (as well as all other sorts of great adventure games). Perhaps the arrival, and subsequent love of Brutal Legend will get the new gamers to check out some of Tim's older works.
All of his games are worth a play through in their own right. Full Throttle is a close second for my favorite Tim Schafer. Though, I do fear that hte new gamers won't be able to deal with the "slow" game play that comes with point and click adventures, even IF this is skeleton travel agenets and bikers we're talking about here.

Psychonauts all the way, although I'll admit my PC is too new to run Grim Fandango, so I can't say I've played it. Full Throttle was amazing as well, I remember that from yeeeaaarrrss ago.
