For each mineral patch you need 2 workers and for each geyser you need 3 workers. Please note that there are multiple patches per mineral field, usually 8 mineral patches and 2 geysers, so the actual number of workers is higher (16 workers for the minerals and 6 for the geysers). It doesn't hurt to have extra workers..that way when you expand you can get the most out of the new base you are setting up from the get-go.
